Food Porn: 3 Cheese Avocado and Spinach Burger

Today in Food Porn: 3 Cheese Avocado and Spinach Burger

1 lb lean ground meat.
1 cup Blue Cheese
4 slices of Horseradish Havarti
4 slices of Baby Swiss
3 TBSP Garlic
1 TBSP Rosemary
1 TBSP Coarse Black Pepper
1 Avocado
2 Cups Baby Spinach
4 Kaiser Rolls

Prep Time: 20 min
Cook Time: varies
Feeds 4

First take your meat, beef, bison, turkey, mystery does not matter, and spread it about 1 inch thick over a hard clean surface like this.

Next spread the garlic in a line down the middle.


Next add the Blue Cheese in the same way.



Sprinkle the pepper and rosemary over the entire area of meat.

Roll the top and bottom over making a large meat log. You can stop here and make a Great blue cheese meatloaf if you wanted, but we are making burgers today.


Now for the fun part. Take the meat in your two hands and start mashing it all together. Feel free to really go nuts. Crush it like your enemies skull. Squeeze it till it oozes out of your fingers like the cake at a childs party. Keep this up until you feel satisfied that all the parts are mixed well or you have gotten out most of your rage issues.

Separate the meat into 4 even parts and form the patties. There are lots of ways to do this. Personally I take the chunk hold one hand flat and place it on my palm. Then in a rotating manner I squish it with my other hand and use my thumb as a depth gauge and to form the nice even edges.
At this point cover the meat and let it sit for at least an hour so it can marinate.
While that is happening take your avocado and cut it in quarters.
Take each quarter and mash it up. You can add some lime and garlic if you like, but i like mine plain.


Smear this inside of your kaiser roll.



Grill your burger patties to desired temp.

Put one slice of each cheese on the burger 30 seconds before it is finished to let it melt a bit.



Place in the roll and stuff the baby spinach on top of the patty.



Serve up and enjoy.

Night in search of Something

It is funny how sometimes we know what we want and go out to get it and the the universe decides that you really needed something else.I went out tonight thinking I wanted a beer and people around me. I ended up at my favorite Irish pub Trinity Hall.  I walked in and was dead, kitchen was closing in a minute. Not want I was looking for. But I let Scott my waiter talk me into staying with promises that the kitchen was not broken down and would be happy to make me something quick.  Not sure why but I stayed. Ordered a cider and shot of rum with some fish and chips. Ok fine yes I am missing England. 
What I didn't realize is that it was the perfect place. The light Irish music playing wirh no one around let me relax and not think about why I was out. Being lonely is not an easy thing to admit or deal with for me. I had invited several people out with me but all were busy with life. Not to be detoured I ventured out on my own. The night was not what I wanted, but in the end is what I needed

Late night walk with a skunk

On my nightly walk I stopped to pet a skunk.
Well, i did not end up petting him, but we did have a good chat.
I work in an industrial complex in Irving. You do not see much wild life, or much of Any life around here at 2am.
Tonight as I was trucking along in my battle to beat the flab of a sit down, overnight desk job i happen by a skunk walking along the road in the grass next to me.
For those that know me here i am a lover of animals of most types. Taking this site in i was reminded of a childhood friend name Charles. He was one of the kindest people you would ever want to meet. A heart that would make a Clydesdale feel inadequate. He had a small farm near the coast in VA in the village where we grew up called Quinby.
Charles had almost every type of pet you can think of, and some before I met him i did not know Could be pets. He had a bat, wild birds, squirrels, you name it, but nothing prepared me for when I saw him petting a skunk one afternoon. Now, I will point out that he was not what most people called bright, but he was Wise in ways that took me many years to figure out. "Dont be scared." He said staring me in the eyes. Easy for you to say mate, I had a date that night and could see this blowing up in my face. "If you are scared she will know and that will make her scared." This made so little since to me at 12 that I understood it perfectly, and oddly enough his calm relaxed me. I walked up to them and grabbed one of the strawberries in the basket next to him and offered it to her. It was friends at first bite.

This friendship showed me a lot about people in general. Some people you meet are things others have told you are bad, smelly, or evil. That stigma sticks to them like a skunks stripe so people meet them and back off for fear of getting it one them. i have literally hear an old woman tell her grand kids not to touch the Gay or it might rub off on them. It does not matter the group; Gay, black, native, white, Arab, furry, punk, christian, you name it, there is always some other group that tears into them to vilify. When I lived in a mostly Mexican apartment complex they hated the blacks. Living in a "black block" in St Louis they hated the whites and Mexicans. The Christians hate the gays and Arabs.

This is NOT to say there are not Good, honestly, and caring people in every group. That is the one thing that gives me hope for the rest of humanity, but i have yet to meet a group that does not hate someone.

This all saddens me, but then i think of people like Charles. While he was "just one man" he changed how I saw the world, and he did it with just a bit of faith and kindness. So instead of railing against all the ones that Hate others, I just try to spread a bit of in site and kindness where I go.

As to the skunk i meet tonight. Well, i sat down near him and extended my hand. He looked me over and came close enough to sniff me but would not  let me touch him. i respected his choice and waited for him to move of so he know i was not a treat. I did not want to have to go back to work and tell them why I needed to go home.

and the Fox says?

So last night the net gave birth to its newest music baby. A variety show group from BergenNorway known as Ylvis posted a vid of one of their new songs that had made for the show. They had been doing this on and off for a few years and had some decent view hits. Last night was not a normal night. 
In an interview with The Hollywood Reporter they stated they this took them by total Surprise. 
The mixture of good singing voices and catchy music had most people i know randomly asking each other "So, what noise does the Fox make"

I am not sure if this is a Good idea or not, but over past few months have noticed a lot more traffic on my Facebook page so after a few promptings decided to try a blog and see where it goes.

Over the course of  the next year i am going to try to post the things that come to mind no matter if they are good, bad, or ugly.


One of the things that came to mind tonight is why is celery considered a food? Food is something that you take in to nourish your body. if anything it should be called an Anti-food. It has no nutritional value on its own. As matter of fact it takes more calories to eat this weed then you get from it. Don't believe me?
